Trezor's THP page says the protocol creates a cryptographically verified layer on top of USB or Bluetooth, blocks man-in-the-middle message injection, and limits communication to approved hosts and applications.
Trezor also says the Bluetooth chip sits outside the secure architecture, so even if Bluetooth as a protocol were compromised, attackers could not access private keys or move funds by that fact alone.
